The dietician spent one hour telling us how to unlock the mystery of carbs. Fun fact, sugar free ice cream is still shitty for diabetics. Still too many bad carbs.
The dietician asked mom if she has any questions. “I didn’t really get any of that but I don’t have to, my son will be doing all the shopping and cooking.”
Last night I made spaghetti and meatballs with a side of broccoli.
First you have to throw out all bleached flour bigoted Barilla and replace it with DeCecco’s whole wheat pasta.
Make the sauce from Pomi strained tomatoes – there’s nothing added, no sodium. Toss in some olive oil, a pinch of sea salt and pepper, garlic and basil (both from an Amore tube. Italian people used herb tubes so don’t judge).
For the meatballs, I used ground turkey, some herbed breadcrumbs, egg white, and onion powder. After searing all sides of my balls, I cooked them for 10 minutes in my sauce.
Pasta is way more interesting if you cook it for a minute in a few tablespoons of the sauce, after you drain the water. Never rinse your pasta! Rinsing removes all that goopy stuff that sucks in the sauce.
I have to say, it was excellent. Or at least my mom said it was excellent compared to hospital food.
I was surprised the DeCecco whole wheat linguini was so damned good. Barilla might be hateful but it was my favorite. DeCecco simply tasted better than Barilla.
This morning we had a spinach and feta egg frittata with a sun dried tomato crème. Mixed 5 eggs minus 2 yolks with 1/4 cup of low fat kefir, salt, pepper, onion powder, and a whatever feta was still kicking around in the fridge. Poured it in a small casserole dish then filled the dish to the top with fresh spinach. Baked at 350 for 25 minutes. The crème was a couple of tablespoons of 2% Greek yogurt with sun dried tomato paste.
I thought my mom liked it until she asked, “Do you think the doggie would like some?”
